-1 egg and one yolk
-100 g caster sugar
-1 tablespoon honey
-100 ml oil
-250 g flour
-15g of vanilla sugar
-15g of baking powder
-200g apricot jam
-spices (vanilla, cinnamon, cloves, lemon peel, orange, etc.)
-200 g grated coconut
Mix the caster sugar with egg, the egg yolk, honey and 1 teaspoon of vanilla sugar. Add the oil, spoon by spoon. Sprinkle the flour mixed with the baking powder. We will obtain a dough that is not too hard, but it can be easy modeled in 1.5 cm diameter ball shape. Prepare the pan with baking paper. Bake in a preheated oven at 180 degrees for 7-8 minutes, or until you notice that the dough is well risen, is slightly cracked and dry.
Place the apricot jam in a saucepan. Then place the saucepan at low heat as to "dilute" the jam. Add spices: cinnamon, clove, vanilla, grated lemon peel.
Tip: If the jam is not very "fine", blend it softly.
Soak the hot balls into the hot frosting, and then put those frosty balls in a bowl with grated coconut. Store cookies in cans. To be consumed next day.
